Do you need more support posts? When it rains, the grass is not aligned to make the water run off. It might end up holding a lot of water, making the mats even heavier. I know you're limited to what you have on hand, and you might not have extra big, extra sturdy bamboo on hand. Perhaps you might consider lashing 3 poles together for each beam, instead of having just the one bamboo pole, which acts flimsy on its own?

    I would of made a bigger fireplace. The exhaust is pretty good. But wasting good smoked meat area. The fire place has room to redesign and hopefully you make this more sturdy and comfortable. Make a bed and shower or bath ,little garden. Heck I'm thinking the animal fat and oils ,how they used to make wax and oils.

    Your grass roof is too low and close to the opening of your chimney as you can see on 0:41. You might consider extending your chimney pass the grass roof to avoid burning your house or at least the roof that is, it would be a waste of your time and effort if that happend right.

    I agree with other comments about the roof angle and materials good for shade from the sun, but not for rain. Layered fan palm fronds would help, but I doubt your roof framing could handle much more weight. The video would be a lot better if you edited it down to one hour.
